Quality control for honey enterprises in less-developed areas: An Indonesian example

Abstract
Simple 'low-tech' procedures are needed for detecting adulteration of honey in beekeeping development projects in less-developed countries. This paper describes a semi-quantitative Fiehe method for hydroxymethylfurfural (HMF) analysis adapted for high ambient temperatures, recommends the use of an abridged Clerget procedure for sucrose analysis, and provides analyses of honeys collected as part of an Indonesian Government honey production project in Riau Province, Sumatra.
