Abstract

The presence of a new enzyme, β-glucosidase,. was shown in significant amount in all 11 honeys tested. Optimal conditions for activity over a 20-min period, using 0.2-M p-nitrophenyl- β-D-glucopyranoside (β-PNPG) as a substrate, were pH 4.2 and temperature 60°C. Results of tests performed directly on untreated honey were similar to those obtained with dialysed honey.
