Abstract
Under the Food Safety Act 1990 of the UK it is a ‘defence for the person charged to prove that he took all reasonable precautions and exercised all due diligence to avoid the commission of an offence’. There is similar legislation in other countries. Thus as part of this due diligence, many sellers of honey use pollen analysis to ensure they have correctly described the botanical and/or geographical origin of the honey.
